What's for dinner: Peanut butter



In all honesty, this isn't my recipe so much as one I slightly altered. My eight year old has been suffering from, what I refer to, as the Jan Brady syndrome and has been showing more and more interest to getting into the kitchen and I have been on the look out for recipes that she would enjoy to work on and eat that would also allow some fun quality time between the two of us. So as I was watching The Chew and saw them make peanut butter, (get their recipe here) l knew it was one I needed to make with her! 



To be honest, I was a little apprehensive about it, having never tasted home made or freshly ground peanut butter, but oh my goodness! I am a changed woman! It was fun, easy and the nuts tasted amazing even before turning them into butter! We paired them with Ritz crackers (now I'm just throwing around free plugs like it's my job!) but we also used it for some delicious PB sandwiches for weekend lunches! I was thrilled to see that all of the ingredients (except the package of peanuts I got) will be more then enough to make one or two more batches (to say the least), making the initial cost a little easier to handle when comparing it to a jar of peanut butter already prepared, jared and on the grocery store shelves. I even got a couple more containers of peanuts so we can make more and give a batch to family!

In truth, the alterations I made to the recipe were more about not reading the recipe I printed out from The Chew's website but it turned out amazing anyway and was even more simplified my way! 

So, here we go! Another recipe you'll love to make and share with family!


Ingredients: 

1lb lightly salted cocktail nuts (I used a can of peanuts NOT in the shell)
2 tablespoons of honey
2 table spoons and 3 teaspoons of maple syrup 
2 tablespoons of refined coconut oil 
3/4 teaspoon vanilla extract 
Something to serve it with I suggest the following
                     crackers
                     bread
                      apples

Directions: 
   * Preheat oven to 350 degrees

   * Line baking sheet with parchment (It will make life easier.I didn't the first time and 
         regretted it!)

   *Pour into a bowl
           Maple Syrup
           Honey
           coconut oil
           Vanilla extract 

    * Whisk ingredients together until smooth

    * Add peanuts

    * Toss to coat
  
    * Pour nuts onto cookie sheet 

    * Spread out into an (almost) even layer

    * place in over, roasting for about 9-11 minutes

    * Transfer you roasted peanuts into your food processor

    * Blend until smooth (about 4-5 minutes)

     *Enjoy!
