Slow Cooker Caramel Hot Chocolate
I found the original of this recipe a couple of years ago (I think on Facebook, though I cant be sure at this point). Over the years I have altered it here and there and it is become a favorite in our house. Even my teen age son's friends raved about it! I make a big batch, that pretty much fills up my round slow cooker and we sometimes have some left overs, which we store in the fridge and then reheat on the stove at a later time.
Also, while this may sound obvious, the hot chocolate is really hot when first served. I mean REALLY hot! Even when we adjust our slow cooker to "keep warm" it is still obscenely hot when we spoon it out into our mugs so please be careful!
Ingredients:
2 1/4 cups semi sweet chocolate chips
2 1/4 cups milk chocolate chips
1 cup (plus a few extra squares) caramel squares, unwrapped
8 cups milk
4 cups heavy whipping cream
2 tsp. vanilla
Topping:
about 2 tsp. whipped cream per cup
Caramel syrup/sauce (like what you top ice cream with)
Directions:
1. add chocolate chips, caramel, milk, heavy cream and vanilla in slow cooker.
2. cover and cook on low for about 2 hours
3. Stir periodically over the 2 hours.
If after two hours the caramel and chocolate chips are not completely melted, stir, cover and cook for another 20-30 minutes. Repeat until ingredients are all melted.
4. stir before serving
5.Top with whipped cream and a drizzle of caramel (if desired).
6. Enjoy!
